The story behind the recipe

Wodzionka, also known as wodzianka, is a Silesian soup made from pieces of bread, garlic, and fat poured over with boiling water. It does not require preparing a meat broth. Both lard and butter are mentioned in the Traditional Product List.

We choose the version with butter and rye bread. This is a short recipe where the flavor mainly depends on good bread, the amount of garlic, and properly seasoning the water.

Ingredients

Soup

  • 150 g rye or mixed bread (stale, about 3–4 slices)
Abroad: rye sourdough bread / Roggenmischbrot
  • 2 cloves garlic (medium; amount can be increased to taste)
  • 20 g butter (unsalted; traditionally replaced with lard)
  • 1000 ml water

Spices

  • salt and pepper (to taste)

Method, step by step

  1. Cut the bread into cubes about 1–2 cm in size and divide it into two deep bowls.

    Step 1
  2. Peel the garlic, finely chop it, and crush it with a small pinch of salt. Add it to the bread, half to each bowl.

    Step 2
  3. Add the butter in small pieces: 10 g per serving. Sprinkle with pepper.

  4. Boil one liter of fresh water. Carefully pour the contents of the bowls with the water, gently mix, and let it sit for 2–3 minutes for the bread to soften and the butter to melt.

    Step 4
  5. Taste and season with salt and pepper. Serve immediately. If you want to thicken the soup more, increase the amount of bread in the next serving.
