The story behind the recipe

Gray sauce is one of the recognizable traditional ways of serving fish in Polish cuisine. The name encompasses several recipes, so there is no single mandatory list of ingredients. The ministerial description of fried carp with gray sauce refers to a variant recorded in 1937: a roux, caramel, wine, raisins, almonds, and a sour addition.

Our home preparation is based on this set. We do not add blood or gingerbread, which appear in other versions. The challenge lies in coordinating three tasks: making a roux without a raw taste, achieving an amber caramel without bitterness, and frying the fish without drying it out. The sauce should envelop the carp in a thin layer, not create a heavy lump.

Ingredients

Fish

  • 1 kg carp steaks (cleaned, steaks about 2–3 cm)
  • 5 g salt

Breading

  • 50 g all-purpose flour
  • 50 g bread crumbs

Fish

  • 80 ml rapeseed oil (for frying)

Sauce

  • 25 g butter
  • 20 g all-purpose flour
  • 400 ml vegetable broth (unsalted or lightly salted)
  • 100 ml dry red wine
  • 50 g raisins
  • 25 g sliced almonds

Caramel

  • 20 g sugar
  • 40 ml water (hot, for dissolving caramel)

Sauce

  • 25 ml lemon juice (add gradually to taste)
  • salt and pepper (for final seasoning)

Method, step by step

  1. Soak the raisins in a little hot water for 10 minutes, then drain. Measure all the sauce ingredients before starting to caramelize the sugar. Prepare a light saucepan and a heat-resistant mat.

  2. Pat the carp steaks dry with paper, remove loose scales and visible bone fragments at the edges. Salt and set aside in the fridge for 15 minutes. Pat dry again. Prepare a separate cutting board for raw fish.

    Step 2
  3. Mix the flour and bread crumbs for breading on a flat plate. Coat the steaks just before frying, shaking off the excess. Discard the ingredients left over from breading the raw fish.

  4. Heat the broth in a small pot. Keep it hot to easily incorporate the roux. Prepare the wine, raisins, almonds, and lemon juice next to the stove.

  5. In a saucepan, melt the butter, add 20 g of flour, and stir over medium heat for 3–4 minutes until light brown. Do not let it burn. Remove from heat for a moment.

    Step 5
  6. In another small saucepan, add the sugar in an even layer. Heat until it turns into amber caramel without burning. Remove from heat and carefully add hot water in small portions. Heat briefly again until the caramel lumps dissolve.

    Step 6
  7. Gradually add the hot broth to the roux in several portions, vigorously mixing with a whisk. After each portion, smooth out the mixture. Cook gently for 3 minutes until the raw flour taste disappears.

  8. Pour in the wine and dissolved caramel, add the raisins, almonds, and half of the lemon juice. Cook uncovered for about 10 minutes over low heat. Season with pepper, salt, and the remaining lemon juice to taste. If the sauce is too thick, thin it with a spoonful of hot water.

    Step 8
  9. In a wide frying pan, heat the oil. Fry the breaded steaks in batches, without crowding, for about 4–5 minutes on each side. Lower the heat if the breading darkens faster than the meat heats up. Check the thickest part, avoiding the bones, for at least 63°C.

  10. Transfer the finished steaks to a rack or paper for a short moment. Do not cover tightly to prevent the breading from steaming. Keep the sauce hot, stirring at the bottom.

  11. Arrange the carp on a warmed platter. Drizzle with some of the gray sauce, spreading the raisins and almonds on top as well. Serve the rest separately in a sauce boat.

    Step 11
  12. Serve immediately with potatoes. Warn about the bones; the sauce does not dissolve them. When serving for children, be especially careful to separate the meat from the skeleton.

  13. If there is a portion left for later, separate it from the communal platter with clean utensils. Transfer to a shallow container and cool quickly. Do not leave the fish on the table all evening.
