The most challenging part of preparing Christmas Eve dinner is coordinating many small tasks: finding space in the fridge, making dumplings, picking up the fish, cooking vegetables, and still managing to sit at the table on time. This organizer combines the menu, servings, shopping, and order of work. Choose the option for six, eight, or twelve people and cross out dishes that your family does not eat.
Food safety sources were checked on October 27, 2026. Serving sizes, organizational recipes, and the schedule are editorial suggestions, not dietary norms. The plan assumes a multi-course dinner and adults with average appetites; consider your guests' needs.

Start Here: Choose the Number of People and Cooking Scope
Open the portion calculator and collective shopping list. The tool allows you to select dishes, change the number of guests, mark products, and print the list. It works without an account. The table below is a complete emergency variant if you do not want to use the calculator.
- Confirm the number of guests, allergies, and who will bring a prepared dish. Do not buy ingredients for a dish that you will receive from family.
- Choose one soup, one fish dish, dumplings, and a few sides. Small portions of dumplings do not have to mean a second large portion of a starchy dish.
- Decide whether you will bake the poppy seed cake or buy it. Our shared list includes a ready-made poppy seed cake: baking it at home requires a separate list from the recipe.
- Check the capacity of pots, the number of burners, and free shelves in the fridge. This is often more important than the number of recipes.
- Assign each dish to a responsible person and a serving time. Also, note the time to start cooling.
Basic Menu: Eight Dishes That Can Be Prepared at Home
We do not present this set as the only traditional Christmas Eve dinner. Families count dumplings, bread, or sides differently and have various regional customs. If you want twelve dishes, select four small sides from the later section instead of increasing all portions.
| Dish | 6 People | 8 People | 12 People | How We Calculate |
|---|---|---|---|---|
| Borscht with Dumplings | 1.5 l + 36 dumplings | 2 l + 48 dumplings | 3 l + 72 dumplings | 250 ml of soup and 6 small dumplings per person |
| Dumplings with Cabbage and Mushrooms | 24 pieces | 32 pieces | 48 pieces | 4 medium pieces when also serving fish |
| Baked Fish Fillet | 900 g | 1200 g | 1800 g | 150 g of raw fillet without skin and bones |
| Herring with Onions | 300 g of herring | 400 g | 600 g | Weight after draining; small appetizer |
| Cabbage with Mushrooms | 450 g of cabbage before cooking | 600 g | 900 g | Additional cabbage outside the dumpling filling |
| Vegetable Salad | about 1.2 kg | about 1.6 kg | about 2.4 kg | Estimated yield depends on peeling and draining |
| Ready-made Poppy Seed Cake | 450 g | 600 g | 900 g | 75 g per person |
| Dried Fruit Compote | 1.5 l of drink | 2 l | 3 l | 250 ml; also serve water separately |
If dumplings are to be the main dish for some guests, increase their portion regardless of the rest of the menu. When buying whole fish, do not use the weight of the fillet: the head, spine, and bones affect the yield. Do not automatically count a child as "half a person"; ask the parent what they will actually eat.
Recipes from Our Library and Conversion Rules
The preparation technique is shown in separate recipes: Christmas borscht, dumplings, dumplings, herring, salad, poppy seed cake, and compote. Our organizer uses its own simplified shopping set; it is not an automatic summation of ingredients from these seven pages.
The conversion factor is the number of your guests divided by eight. For six people, it is 0.75, for twelve it is 1.5. The weight of flour or cabbage can be converted directly. Add salt, pepper, acid, and sugar gradually to taste. Baking time does not increase linearly with the number of portions: thickness of the product, size of the dish, and actual internal temperature matter.
Shared Shopping List: Complete Variant
The weights of vegetables refer to products before peeling, except for marked exceptions. Weigh the cabbage after draining excess brine, herring, and peas after draining. The water listed includes ingredients for recipes, not water for washing and cooking dumplings. Round quantities to the size of packages only after checking your pantry.
| Product | 6 People | 8 People | 12 People | Where It Goes |
|---|---|---|---|---|
| Wheat flour without leavening agents | 600 g | 800 g | 1200 g | Dumplings 300 g and pierogi 500 g in the base for 8 |
| Beets | 900 g | 1200 g | 1800 g | Borscht |
| Carrots | 300 g | 400 g | 600 g | 150 g for borscht, 250 g for salad |
| Celery root | 150 g | 200 g | 300 g | Half for borscht and salad |
| Parsley root | 112.5 g | 150 g | 225 g | Salad; can round to one suitable piece |

| Butter | 30 g | 40 g | 60 g | Fish; oil is a dairy-free variant, check the rest of the menu |
| Lemon juice for borscht | 22.5 ml | 30 ml | 45 ml | Starting point, season after tasting |
| Lemon for fish | 1 piece | 1 piece | 2 pieces | Rounded number for purchase |
| Vegetable broth | 1.875 l | 2.5 l | 3.75 l | Borscht: ready unsalted or prepared separately |
| Dried fruits for compote | 225 g | 300 g | 450 g | For example, apples, pears, and plums |
| Optional sugar | up to 30 g | up to 40 g | up to 60 g | Compote; often the sweetness of the fruits is sufficient |
| Ready-made poppy seed cake | 450 g | 600 g | 900 g | Or separate purchases for the chosen recipe |
Check your pantry for: salt, pepper, bay leaves, allspice, cinnamon. To prepare compote for eight people, start with about 2.2 l of water and after cooking, top up the drink to 2 l; some water will be absorbed by the fruits. The dough for dumplings and pierogi needs a total of about 425 ml of water, added considering the absorbency of the flour. Also, buy containers, baking paper, and labels if you do not have them.
How to Expand the Menu to Twelve Dishes
The simplest way is to add four small items that will not take up another four burners: gingerbread, kutia, Greek-style fish, and a separate small portion of bread with an addition consistent with family tradition. Alternatives include noodles with poppy seeds or mushroom soup. The second soup increases work and the amount of liquids, so reduce the portion of borscht then. The sides are not included in the above shopping.
Do not cook twelve full dinner portions per person. Write the menu on one sheet and check if three dishes have almost identical fillings, and three others require frying at the last minute. For a small kitchen, one baked fish and one cold appetizer are better than two parallel fryings.
Three-Day Plan: From Filling to Serving
December 22: Tasks Requiring the Most Manual Work
- In the morning, take inventory of products and separate dry purchases from refrigerated ones. Transport and store fish in the cold.
- Prepare cabbage and mushrooms according to the recipes. Use mushrooms from a reliable source; do not identify unknown specimens based on photos.
- Make the fillings, divide them into shallow containers, and cool quickly. Do not leave a large pot on the counter overnight.
- Make dumplings and small dumplings. If they will not be used quickly according to the recipe, freeze them in a single layer, then transfer to labeled bags. Note whether they are raw or parboiled.
- Bake the poppy seed cake or pick up the order. Label allergens and storage methods. Baked goods with cream require different treatment than dry gingerbread.
December 23: Soups, Vegetables, and Preparing the Space
- Cook the borscht and compote, then cool them in smaller containers. Separate a portion for serving from the reserve.
- Cook vegetables and eggs for the salad. Store cooled items covered; mix the salad with clean tools.
- Prepare herring if the recipe and the time after opening the package allow. Oil brine does not replace cooling.
- Transfer frozen fish to the fridge well in advance, following the product instructions. Place it in a sealed container below the ready dishes.
- Set up platters, label the purpose of containers, and outline the burner plan. Leave space for safely cooling leftovers.
December 24: Example Dinner at 5:00 PM
| Approximate Time | Task | How to Reduce the Queue in the Kitchen |
|---|---|---|
| 10:00 | Check the fish, fridge, missing purchases | Do not start by setting all cold dishes on the table |
| 12:00 | Season the salad and appetizers | Put back in the fridge |
| 14:00 | Prepare trays and dishes for serving | Assign a separate set of tools for raw fish |
| 15:30 | Start heating the cabbage and borscht | Heat only the portions needed for the table |
| 16:00 | Cook the first batch of dumplings and small dumplings | Do not overcrowd the pot; prepare a colander and tray |
| 16:15–16:45 | Bake the fish according to the thickness of the fillets | Doneness is determined by the thermometer and recipe, not just the time |
| 16:50 | Remove small portions of cold appetizers | The rest stays cold; note the time |
| 17:00 | Serve the borscht, then hot dishes | One person is responsible for refilling and cooling |
This is an organizational example that should be adjusted to your equipment and recipe. An oven with two trays may bake unevenly. Leave a buffer time and check each batch, especially with a large number of guests.
What to Freeze and What to Prepare Closer to Dinner
| Dish | Reasonable Planning Method | What to Watch Out For |
|---|---|---|
| Dumplings and small dumplings | Prepare in advance and freeze separately, then package | Label the preparation stage; choose the cooking method accordingly |
| Borscht and cooked cabbage | Freeze in small portions after quick cooling | Leave space for liquid expansion and thaw in the fridge |
| Poppy seed cake and dry gingerbread | Seal in portions if the recipe allows freezing | Do not apply the rules for dry dough to baked goods with easily spoilable cream |
| Vegetable salad | Prepare closer to serving and store in the cold | Freezing worsens the texture of the dressing and vegetables |
| Herring and fish | Include labeling, prior thawing, and time after opening | Do not assume a universal timeframe for all brines and products |
The official FoodSafety.gov chart assumes a refrigerator temperature of up to 4°C and a freezer of −18°C. For many cooked leftovers, it states 3–4 days in the fridge; this is not an automatic timeframe for every Christmas dish. Ingredients, labeling, hygiene, and time before cooling matter. Freezing recommendations in the chart describe quality, assuming uninterrupted proper freezing.
Safety: Five Decisions More Important Than Decoration
- Cool Quickly and in Portions. Do not wait for several hours for a large pot to cool on its own. Shallow containers facilitate cooling. Food requiring cooling should be stored no later than two hours, and in heat above about 32°C within one hour. These are the rules described in the four steps of FoodSafety.gov.
- Use a Thermometer. For fish, the federal table indicates 63°C internally, and for reheated leftovers, 74°C. Measure the thickest part, avoiding the tray and bones. See the official temperature chart.
- Thaw Safely. The fridge allows you to maintain a low temperature; the kitchen counter overnight is not a proper method. Follow the manufacturer's guidelines and use appropriate containers.
- Separate Raw from Cooked. A cutting board and knife used for raw fish cannot go into the salad without thorough washing. Wash hands, not just rinse them with water.
- Do Not Judge Safety Solely by Smell. An unpleasant smell is a reason to discard a dish, but the absence of smell does not confirm proper storage. Do not taste questionable food "to check".
Allergies and Different Needs at One Table
Ask about them before shopping. This menu includes fish, wheat, eggs, milk, celery, and mustard; the poppy seed cake may also contain nuts. This is a list of specific ingredients, not a complete list of legal allergens. Check each label, especially for ready-made broth, mayonnaise, and baked goods.
For someone requiring strict avoidance of an allergen, simply removing the sauce from the plate does not solve the problem. Separate ingredients, tools, and platters according to their needs. A vegan version requires more changes than just substituting butter: it concerns fish, herring, eggs, mayonnaise, and the composition of the dough. Label dishes so guests do not have to guess.
How to Reduce Costs and Amount of Leftovers
First, count portions, then compare the price per kilogram or liter. Check if the price of herring applies to the whole package with brine, and whether the weight of peas is net or drained. A more expensive, ready fillet may yield differently than a whole fish. In the shopping table, mark what you already have; apparent savings from promotions disappear when you buy the same supplies a second time.
After dinner, divide leftovers into shallow, labeled containers. The label should include the name, date of preparation, and possible freezing. A cold platter that has been sitting on the table for a long time does not become a fresh portion after mixing with the stock from the fridge. Serve food to guests with information about cooling and transport it under appropriate conditions.
Frequently Asked Questions
Is the list sufficient if I bake my own poppy seed cake?
No. It contains the mass of ready-made dough. Add ingredients from your chosen recipe and subtract the ready-made poppy seed cake. This way, you will not confuse a semi-finished product with a complete baked good.
Can I add beetroot sour?
Yes, if you use the appropriate recipe. Then change the amount of broth and acid; do not mechanically pour sour into the already measured volume. Do not use ferment with mold or uncertain origin.
Is one pot of dumplings enough for twelve people?
It depends on its capacity. Cook in batches so that the water quickly returns to the proper temperature, and the dumplings have space. Doubling the amount of ingredients does not mean double the time for one batch.
Can the balcony replace the fridge?
Do not treat it as a controlled cooling device. The temperature changes in the sun and throughout the day, and containers may be accessible to animals. Organize the number of dishes according to the actual space in the fridge.
Can everything be cooked a week in advance?
Do not store the entire cooked dinner for a week in the fridge. Choose dishes suitable for early preparation and freeze them properly, and make the rest closer to serving.
How to save the organization when I only have one evening?
Limit the set to borscht with ready dumplings, one fish dish, one cold appetizer, and purchased cake. Divide responsibilities. Preparing eight dishes from scratch in a few hours increases the risk of haste and missing cooling.
